Heel in English. In Spanish "culo" or butt - this used normally for a baguette. The crust is the bread's "envelope" so it cannot be a the end of the bread.

"Butt" is a term used for the ends of a roast.
"Crust" would be any of the outside, not just the ends.
"Heel" is the term most commonly used.
