It didn't. The water did not turn to blood, it can't. Some algal blooms will give the water a reddish hue and make it taste unpleasant. These have occurred in the Nile from time to time. The myth about the water turning to blood was probably a reference to such a bloom.

In a metaphoric sense, it came from all of the people who murdered each other in the name of land, politics, and religion.
