HEARTY TOMATO RICE SOUP

2 tablespoons butter
1 lb. hamburger
1 cup onion, chopped
1/2 cup celery, chopped
1 large can tomatoes
2 1/2 cup water
2 beef bouillon cubes
1/3 cup dry rice
salt and pepper to taste
1 teaspoon fresh basil or half teaspoon dried
2 tablespoons fresh parsley, chopped
3 garlic cloves, minced or 1/2 teaspoon garlic powder

Saute hamburger and onion in butter; add celery. Break up hamburger into small pieces.
Combine with remaining ingredients. Cook over low heat 30 minutes or until rice is tender.

Optional: Use chopped steak instead of hamburger. Stir in 1/2 cup of heavy cream 10 minutes before serving.

CHICKEN FLAVORED RICE AND PEAS

any size can chicken broth
instant rice
frozen peas

Cook the rice according to package directions, substituting chicken broth for water. Meanwhile, heat frozen peas in microwave or on stovetop until thawed.
Mix the rice and peas together when both are done.

Makes 4-5 servings.

1 1/2 cups long-grain rice
2 tablespoons vegetable oil
1 (3-inch) cinnamon stick
7 whole cloves
5 cardamom pods, if desired
2 1/2 cups water
1 teaspoon salt
1/4 teaspoon crumbled saffron threads
2 tablespoons milk

In a large bowl wash rice in several changes of cold water until the water runs clear and drain it in a fine sieve.

In a large heavy saucepan heat the oil over moderately high heat until it is hot but not smoking, add the cinnamon stick, the cloves, and the cardamom pods, if using, and fry the spices, stirring, for 30 seconds, or until the cloves are puffed slightly. Add rice and cook the mixture, stirring, for 1 minute, or until the rice is opaque. Add 2 1/4 cups water and the salt, bring the mixture to a boil, and cook the rice, covered, over low heat for 15 minutes.

While the rice is cooking, in a heatproof bowl set over a small pan of simmering water heat the saffron for 3 to 4 minutes, or until it is brittle. Add milk, heat the mixture, stirring occasionally, until it is hot, and remove the pan from the heat. Drizzle the saffron mixture over the rice and continue to cook the rice, covered, for 5 minutes. Remove the pan from the heat and let the rice stand, covered, for 5 minutes.

Here's a recipe using broccoli and rice. It's a family favorite.

RICE AND BROCCOLI CASSEROLE

10 oz. broccoli, thawed, not cooked
2 c. Minute Rice, uncooked (I use Success Rice)
1 can cream of celery soup
1 soup can water
8 oz. Cheez Whiz
1/2 stick butter, melted

Spray the baking dish with a non stick spray.
Mix all ingredients together and put in the baking dish and bake for 30 minutes at 350'.

1 cup of rice + 1.5 cup of water and then boil it on a really hot heat until it is boiling. When it is boiling, remove the cover and put the heat down. When the water start disappearing, put the cover again.

While waiting for the rice to boil or cook, do some chopping.

2 big carrots or about 4 baby carrots, chop into small cubes
2 cloves of garlic, sliced thinly
about a handful of sweetcorn
5 green beans, chop thinly but not too thin

after the rice is cooked, put about 2 tbsp of oil (any oil-sunflower oil, canola oil, olive oil) into a wok and then put the chopped garlic. When the garlic is getting brown, put the chopped carrots, beans, and corns into the wok. Wait for about 3 minutes and then put the cooked rice in. Put some salt to taste and about 1 tsp of brown sugar. keep on stirring it for about 5 minutes and then the rice is ready.

ps you can put meat into the rice to if you want. Slice chicken or pork or any meat thinly and put it in after the garlic turns brown and then wait until it is cooked before you put the chopped carrots, beans and carrots in.

FRIED RICE

4 cups boiled rice
3 tablespoons olive or peanut oil
1 tablespoon dry green (or other) onion
1/4 teaspoon garlic powder (or 2 cloves fresh)
2 tablespoons dried mushrooms
2 dried whole eggs, rehydrated
1 tablespoon soy sauce
shredded canned ham, pork or chopped shrimp (optional)

Sauté rice in oil for 5 minutes, stirring occasionally. Add green onions and mushrooms and meat, if using. Cook for several minutes. Combine rehydrated eggs with soy sauce and stir into pan. Cook until eggs set.

Porcupine Meatballs

500g Minced beef
1./2 cup uncooked rice
1 pkt French onion soup mix
1 large can tomatoe soup ( or 1 can soup and 1 jar italian sauce)

Mix meat, rice and French onion soup mix together. Make into meatballs. In a casserole dish pour tomatoe soup in first ( or with italian sauce) then put meatballs on top , give a little stir so as to coat meat. Bake covered 180C or 350F about 1 hour stirring every 20 mins. Serve with mashed potato, carrots, peas and brocolli.

just put 3 tablespoons of olive oil, one full tablespoon of salt, then add 2 cups of water per one cup of rice, when it stars boiling turn the heat down (maybe to medium) and cover the pot.. if you want a little more of flavor just add a quarter of onion.. let the rice absorb the water and your rice is done!
note: try to buy parboil rice ( i don't remember how you write that)

Get a decent rice cooker (Zojirushi), measure rice, pour water, push a button, 30-40 minutes later you'll have perfect rice.

heat sauce pan w/ oil.

add 1 cup rice.

sear a little

add chopped oinion

add a little tomato sauce

add 1 tblspoon chicken broth/boillion cube/etc.

add 2 cups water

bring to boil

lower heat, cover and simmer for approx 20 mins.
