Just slice the zucchini long ways in lengths about 2 inches long then sautee it in a skillet till tender all the way through in olive oil and season with pepper and fresh lemon. Very easy and clean tasting. No fat and tastes great. Only takes a few minutes and clean up is a breeze.

Zucchini Gratin with Gruyere Cheese
ingredients:
2 pounds small zucchini, shredded on the large holes of a box grater
Salt
3 tablespoons unsalted butter
1 small shallot, minced
1/2 cup heavy cream
1/2 cup shredded Gruyere cheese (1 1/2 ounces)
directions
Preheat the broiler. Put the shredded zucchini in a large colander and toss with 1/2 teaspoon of salt. Let the zucchini stand for 5 minutes, then squeeze as much liquid out of the zucchini as possible.
In a large nonstick skillet, melt the butter. Add the minced shallot and cook over moderate heat until the shallot is softened, about 3 minutes. Add the shredded zucchini and cook over high heat, tossing, until the zucchini is just softened, about 2 minutes. Add the heavy cream and simmer until thickened, about 1 minute. Remove the zucchini from the heat and season with salt. Transfer the zucchini to a shallow baking dish. Scatter the Gruyere on top of the zucchini and broil 4 inches from the heat for 1 minute, or until the cheese topping is golden brown. Serve the zucchini gratin right away

Someone else has probably done this recipe before, but this is the version that I made up:
Preheat the oven to 350 degrees.
Peel two or three zucchini and cut into julienne strips. Drain a small can of diced tomatoes thoroughly.
Mix together a cup of dry seasoned breadcrumbs (storebought Italian flavor works best) and half a cup of grated Parmesan cheese.
Sprinke the bottom of an 8x8 casserole dish with a third of the crumb mixture. Top with half the zucchini and diced tomatoes, then drizzle lightly with olive oil.
Repeat the crumb and zucchini-tomato layers, then top with the rest of the crumb mixture. Sprinkle with additional Parmesan, if desired.
Bake until tender and bubbly -- about 20-25 minutes.

ZUCCHINI CASSEROLE
3 large zucchini (cubed with peel on)
1 large onion, peeled and chopped
16 oz. shredded cheese
1 can cream of celery soup
2 eggs (beaten)
2 tablespoons mayonaise
2 tablespoons sugar
3 cups bread crumbs
1 stick margerine, melted
Cook zucchini and onion in enough salted water to cover, just until slightly tender.
Drain and add next 5 ingredients and mix well. Pour 1/2 into 15 X 11 X 2 casserole. Stir margerine into bread crumbs and sprinkle 1/2 on first layer of zucchini mixture.
Repeat layers.
Bake at 350 degrees for 35 to 45 minutes

Corn and Zucchini Medley
Ingredients
2 Tbsp. olive oil
2 cups chopped zucchini
1 1/2 cups fresh or frozen corn
4 sliced green onions
1 clove garlic, minced
1/2 tsp. Seasoned Salt
1 pinch freshly ground black pepper
2 Tbsp. Bacon Baconâ¢
1/2 cup shredded Monterey Jack
Directions
Heat oil in large skillet over medium heat. Saute zucchini, corn, onion and garlic until crisp-tender. Season with Seasoned Salt and pepper. Spoon vegetables into serving bowl; sprinkle with Bacon Bacon⢠and shredded cheese. Makes 5 servings.

Stuffed Zucchini
4 Small Zucchini
1 Bag of shredded Cheddar/Jack cheese
1/2 Onion, finely chopped
Garlic Powder
Pepper
Boil water in a pot, then lower the heat until the water comes to a simmer. Add zucchini, and cook until soft. Cut zucchini into halves and scoop insides into a bowl. Saute onion. Add onions, garlic powder, pepper, and cheese into the bowl with the zucchini insides. Mix it all up and return to the skins, and bake in oven for about 30 mins at 325.

Zucchini Patties
INGREDIENTS:
* 1 1/2 cup grated raw zucchini
* 2 tablespoons minced onion
* 1/4 cup grated Parmesan cheese
* 1/4 cup all-purpose flour
* 2 eggs
* 2 tablespoon mayonnaise
* 1/4 teaspoon oregano
* Salt and pepper to taste
* 1 tablespoons butter
PREPARATION:
Press excess moisture out of grated zucchini between paper towels. Mix together everything but butter to make the batter. Melt butter in skillet. Spoon batter (about 2 heaping tablespoons per patty) into skillet. Flatten lightly with spatula. Cook over medium heat until nicely browned on both sides. Serve plain or top with tomato sauce and grated cheese. Serves 4.

I cut mine in half length ways. I put minced garlic on top. I then grill it on a gorge forman grill till the little dark grill lines are on it. Slice it into smaller pieces and serve. If you have no garlic, then you can always marinate the slices in Italian dressing. It turns out great!
Also, you can fry it.
You will need eggs, bread crumbs, Cajun seasoning, and zucchini. Simply cut the zucchini into slices width wise. Mix a small amount of the seasoning to the bread crumbs. (Too much will make it too salty). Dip it into the egg, then the bread crumbs. Place in a frying pan with a small amount of olive oil. You will want the oil to almost cover the zucchini. Brown on both sides, and serve. It's really good with ranch dip or alone. Try adding different seasonings to the bread crumbs for different taste!

Most zucchini recipes are for entrees, rather than side dishes.
Slice fairly thin, maybe a quarter inch thick, dip the slices in milk/egg, then in crushed saltine crackers, then fry like green tomatoes.
Or cut them 3/8 inch thick, sprinkle them with oil, and grill on the barbecue.

Zucchini & Cheese ( Family Favorite.)
Cut Zucchini and onion. Put in water and boil until very soft. When the water boils almost all the way down, add white american cheese to the top until melted. (Provalone is also good.)
Stuffed Zucchini.
Cut Zucchini long ways in 2. scrap out center with a spoon. Fill with blue claw crab meat, sprinkle with ole bay. Top with Motsarella and bake until zucchini is tender.
