How come you can eat blue cheese but not moldy bread?

Because, blue cheese is cultured mold. It is a spacific strand called Penicillium. bread mold is caused by Rhizopus nigricans.

I eat moldy bread all the time. I just pick off the moldy parts and eat the rest.
