Can anyone tell me what is the best type of vessel to brew beer in for fermentation stage? I am going to transfer it to a stainless steel keg after fermentation and settling.

You can never go wrong with glass carboys.
A less expensive alternative is to use food-grade plastic buckets for primary fermentation, then rack to a carboy for secondary fermentation. You want glass or stainless for secondary because it's not gas (oxygen, specifically) permeable as plastic is known to be. Glass is handy in that you can see as your brew is clarifying and settled. The drawback is the breakability. Stainless is handy, durable, and easily cleaned...its drawback is simply expense.

Glass is the best way to go. Steel is too expensive and glass cannot be used for long term fermenting.

The easy cheap way is to buy ( or acquire) a 5 gal water bottle and place some chared cedar chips for flavor and filter before transferring to the keg.

5 gallon pickle bucket...without the pickles. I use it all the time to ferment in, be sure you have a tight lid and an airlock so it deosn't blow up.

Food grade plastic garbage can in primary ferment. GLASS (NOT PLASTIC!!!!!) carboy in secondary.

large stainless steel pot. thats what we do. and just like everything else, make sure its sanitized thoroughly.

Old fashioned barrel...the kind made out of cedar or charred oak.
