The only way to get a filet mignon medium well/well doneness is to butterfly it before placing on the grill. It is such a thick cut of meat, if you don't do that it will just make the outside burnt & tough.......the best degree of doneness for this cut is medium rare/medium, but you fix it the way you like it - you are the one who gets to enjoy it!!

Check it with a fork after 4 min. on first side. Turn over and now you have an idea of how long to cook on the other side. You don't want to over cook it. It will dry out and be tough. You might want to cook it to med. then let sit one or two min. to retain the juices. It will continue to cook on it's own. Enjoy!

about six min. per side for med well..... depends on the thickness and how low the low heat is.....
