Using ketchup as the tomato base.

Everyone has their own secret sauce it seems, and mine's pretty basic, so here goes:

1 1/2 cups catsup
1/2 cup brown sugar
1 T yellow mustard
3 T red wine vinegar
1 tsp red pepper flakes
1/8 tsp garlic powder

Blend ingrediants and simmer to meld flavors. Add more mustard or vinegar to taste. Salt and pepper to taste. Simmer until mixture is reduced and thickened. Store in refrigerator.

Homemade BBQ Sauce: Very yummy homemade sauce. I have had some people who don't even like barbecue sauce say that they really like this one. 5 min 5 min prep 1 bottle of sauce 1 (12 ounce) bottle chili sauce 1/4 cup water (use it to rinse out the bottle) 3 tablespoons cider vinegar 3 tablespoons brown sugar 1 tablespoon mustard 1 teaspoon Worcestershire sauce 1 teaspoon liquid smoke 1. Mix all ingredients in a bowl. 2. Use to make ham barbeques, barbecue meat or on my recipe for Bacon Chicken.

BARBECUE SAUCE

1 green bell pepper, seeded and chopped
1 1/2 tablespoons olive oil
1 large onion, chopped
6 cloves garlic, minced
1 tablespoon dry mustard powder
3 tablespoons brown sugar
3 cups catsup
1/2 teaspoon red pepper flakes
1/2 teaspoon whole cloves (optional)
1/4 cup Worcestershire sauce
1/2 cup cider, wine or malt vinegar
4 tablespoon molasses (or honey)
2 chipotle peppers, chopped

Saute pepper, onion and garlic on medium heat until onions are translucent, adding garlic and red pepper flakes after onions start to cook. Do not allow garlic to brown.
Place the whole cloves in the center of a (new prewashed) square of cheesecloth, wrap up and tie tightly with a cotton string. Alternately, put cloves inside a tea ball if you have one. Add this to saucepan when adding the catsup. This will make it easier to remove the cloves when done.

Stir in remaining ingredients; bring to a boil, then immediately reduce heat to a low simmer. Simmer 15-20 minutes. Remove the packet of cloves. Adjust seasonings to taste when cool.

Ladle cooled sauce into a clean jar. Store in refrigerator for up to 2-3 weeks, or process in a pressure canner 15 minutes for longer storage.

Makes about 1 quart, but recipe may be doubled.

You can add a few drops of liquid hickory smoke if a smoky barbecue flavor is desired.

Version 1
1 cup Ketchup
1 cup vinegar
1/2 cup Dark corn Syrup
2 teaspoons sugar
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne powder

Combine all ingredients in a bowl.
Heat on high in the microwave stirring every 30 seconds until mixture is bubbly.


Version 2

1 cup ketchup
1 cup vinegar
1/2 cup mollasses
1/2 cup honey
1 teaspoon liquid smoke
1/2 teaspoon salt
1 clove crushed garlic
1/2 teaspoon onion powder
1 teaspoon Tabasco

Mix all ingredients in a bowl and heat on high in the microwave until bubbly stirring every 30 seconds.

I cant remember the measurments to this but its very good.

A-1 sauce
ketchup
brown sugar
and a tad of mustard (yellow)

mix these together, I usualy make it to where its got a bit of "twang" to it. that would be from the A-1 sauce. I got this from an A-1 bottle years ago. try it, its very good.

medium white onion
olive oil
2 cups ketchup
1 cup water
6 tbs. brown sugar
6 tbs. white sugar
1/2 tbs. black pepper
1/2 tbs. onion powder
1/2 tbs. dry mustard
juice of one lemon
2 tbs. Worcestershire sauce
1/2 cup apple cider vinegar
1 tbs. chili powder
1/2 tbs. cumin

Saute your white onion in olive oil...add all the other junk and let it simmer until it reaches the thickness you like. Use it to either baste your meat or as a dipping sauce.
