I'm making dinner tonight for me and my fiancee, he really likes red wine. What is your favorite bottle of red wine, and a great dish to go with it?
Different cheeses that go well are also appreciated!

Go for a full bodied Cab, Shariaz, or a cab/merlot (Burgundy style). I'm partial to looking for wines from your area or an area you want to travel to or have traveled from (there are so many good wines out there that recommending a specfic one is tough. If you can find a wine with 89-95 rating in the $10-15 range you should do well. Open it and allow it to breath.
As for a meal a really fun one is Beef Borgenoign (a beef foundue). But any beef/lamb dish will go really well. DA

There is a wine called Two Barrel that is just awesome! It can be hard to find - it goes well with spicy food like a Beef Pad Thai.
If you like sparkling wines - look for Paringa Sparkling Shiraz. Yes - this is a red wine. And it total rocks! Also good with a spicy beef or pork recipe.
Both of these would do well with a spanish cheese like manchego. Or Maytag blue. These are strong red wines that go well with strong flavors.
Find a good wine shop with a knowledgeable staff. They are usually good at helping match wine and food. If the staff takes you either to the wines just above your high price point - or the clearance rack (or at least doesn't apologize for taking you there) then this is not where you want to buy your wine. A good staff with show you the best wine within your price range and help with food suggestions...

Louis Jadot Beaujolais is an excellent wine. Oooh, so is Red Truck Pinot Noir. Or, Menage a Trois makes an great line of reds and whites for that matter.
Try Gruyer cheese with red wine (its a bit expensive). Or pick up some fresh mozzarella (it's usually wet or soaked in olive oil), and feta cheese stuffed olives! Yum.
As for a dish.....a charcoaled steak is always a favorite although, an italian sausage lasagna hits the spot. If you want to go all the way out....I've got a recipe for homemade ravioli thats simply terrific.

Usually ed wine is considered to be complementary to beef entrees, pasta with a beef sauce, Of course the particular variety of wine you choose will also bare heavily upon how it will match up to the rest of the meal. If you are serving a hardy dry wine like a burgundy you should be fine with the beef but if you go to a sweeter more fruity wine, you may want to go to chicken or seafood. Or if as I do you live in West Virginia where all the culture in the state is concentrated in petri dishes in Morgantown most people won't unwrap the bag from the neck of the bottle to see what color it is so you can go with a cigarette and chips, or burritos!

I like having red wine with a really good Steak. Another thing that goes well with red wine is Cheese.

red wine goes best with rich dark foods.....
Steak or any kind of beef cuts including veal also with lamb.
It goes with pasta as long as the sauce is of a red wine derivation.
Although it all depends on what you are serving as to what wine goes well.... also on taste...
you don't want to serve a steak with a sweet red..... I would recommend something on the order of a nice ny strip or ribeye,filet, tenderloin or maybe a sirloin with a syrah or cabernet you can go as far as a merlot but no further.
we are not all idiots..... but you have to take the good with the bad....

Steak/ baked potatoes with all the fixings/ green salad with balsamic vinegar dressing and Suicide Chocolate cake with port for dessert.
With the dinner serve either a nice bottle of Cabernet Sauvignon or Sangiovese.
Have a wonderful meal and smile lots, it is so fun to enjoy good food and company.

I think a chicken dish will compliment the red wine very nicely. Also i would make a bleu cheese dish. Good Luck!

Any pasta using tomato sauce like spaghetti or Ravioli.
Red meats go good with red wine too.
usually the food should go with the wine color.
