use a sweet onion like vidalia or maui, and a lot of them, they cook down. Also use a dry red wine that you would actually drink for yourself. Never use the "cooking" wines on the grocery store shelf. It doesn't take much, just enough to de-glaze the pan, but it will be worth it.

I use yellow cooking onions and whatever wine I have on hand. I usually have wine in the freezer from when I don't finish a bottle.

I like red onions for mine. They have natural sugars so you don't have to add too much more sugar to carmelize them. And I use a sauvignon blanc. Red would be too heavy with the beef broth.

I think that fresh oinion and white wine ( Alsace ) are so good , don't miss old bread ..
put wine in soup is called " FAIRE CHABROT "
