there should be a annual fighting competition where every country in the world even the smaller ones choose their best fighter of any style and any weight class, then they make a tournament by putting fighters in steel cages with no rules to figure out who is the best fighter.
it would be really cool to see a Japanese sumo wrestler fight an American boxer or a hindu guy with a dot on his forehead fight some african guy with grass skirt or a big muscular Russian against a Canadian

While it would never work out due to politics, some countries would never participate for numerous reason whether it be due to the violence, the hatred of other countries involved etc. etc etc. I would however love to see it, it would interesting to see how different fight styles matched up when you had so many different participants involved.
Also, I would also love to see how quickly the French fighter submitted without even being touched.

For me it would depend on the intentions of the competition.
If if were to prove which fighting style is better than another: I'd hate the competition and all that it would stand for.
If it was a friendly rivalry kind of thing: I guess it would be ok.
It wouldn't prove anything, but it might be interesting to see how the fights would be.
Maybe the rules should be a bit more than just being in a cage. I don't think making it like underground fighting is a good idea. If it were a mixed fighting olympics thing? I guess it would be all right.

Da Funk has it right, also there were other championships. The 'World Vale Tudo' championship and maybe a couple of others where they used the minimal rulesets and let anyone who wanted to fight come.
Watch the first few UFCs. You will see what happens to people who haven't learned grappling when there's no rule against it.
Now everyone has learned some grappling, so the fights aren't as one-sided as the early 90s, but there are still plenty of students at kung fu, karate, tkd schools that believe they can win without it. This makes for fun times at parties.

That only works in the movies.
What you are describing (as far as open weight class and different styles), is what the first UFC was like. This was changed to protect the fighters and to make them more even.
It's an unfair advantage to have 20 lbs on your opponent, let alone over 100, that's why they have weight classes now.
Also, today fighters learn both grappling and striking, so the styles are similar, it won't be as the old days, fighters need to be well-rounded nowadays.

Yes, this would be a cool way to settle differences between countries. I dont think it would be so cool to just do it for entertainment purposes.
This was used by a lot of cultures in the middle east and mediterranean before they fought battles in ancient days. It was a way of sizing up the opposing army. Sometimes the battle would be settled before thousands were killed.
An example of such is the opening of the movie "Troy" and the story of David and Goliath in the Bible.

I think Van Damme made two movies like that in a way. the best MA is not always the best fighter too.

Thats what the UFC was like originally (except for the country affiliations). They basically proved what styles worked in real life and what ones didn't.
