"Est-ce que tu fais ? does'nt mean anything ; a word is missing (= Are you doing ?").
If you don't know very well the person you're talking to, you have to say : "Qu'est-ce que vous faites ? "

Though you both are probably right....in ANY language..there's usually at least more than 1 way to say what are you doing? er...I think...got this from a translotor so it might not help if you want to know how to say it informally...

What are you doing, said to a friend, is "Qu'est-ce que tu fais?" - just as you suggested.
The polite form is similar - "Qu'est-ce que vous faites?"
