Chop onion, fresh chilli to taste and lots of garlic very finely, fry until browned in olive oil. Add the white wine and bring to the boil. Add prawns or mixed seafood, cook these through. Turn heat off and stir in a small carton of double cream. Season and finish by adding chopped parley.

Saute garlic in a little olive oil for about 1 minute making sure it doesn't turn brown. Add shrimp and cook until they start to turn pink, then turn them over and finish cooking--this only takes a few minutes; don't overcook! Remove shrimp from pan into a bowl. Into pan, add some chicken broth or stock, maybe a cup, and some wine, again maybe a cup, and cook on med-hi heat until reduced by 1/2.
Turn off heat and add about 2 T butter, some salt/pepper, and some chopped parsley (optional, but the green color looks nice in the dish, and it adds some flavor).
Meanwhile, cook your linguine in salted water, and before you drain it, reserve 1/2 cup of the pasta cooking water (the starch helps make the sauce smooth). Into drained linguine, pour your wine sauce and pasta water, and mix in the shrimp.
Yummy and easy--you're just throwing things together! Serve with a salad and more wine.

White Wine and Garlic Dream Cream
INGREDIENTS
1 tablespoon butter
3 large shallots, sliced thinly
4 cloves garlic, chopped
1 1/2 cups white wine, divided
ground white pepper to taste
3/4 cup heavy cream at room temperature
1 lemon, juiced
salt to taste
DIRECTIONS
Melt butter in a medium saucepan over low heat. Cook and stir the shallots until they become translucent and tender; stir in garlic and cook until tender and aromatic.
Stir in 1 cup white wine, increase heat to high and bring to a boil. Once it boils, add the remaining 1/2 cup wine. Boil for 10 minutes then reduce heat to medium-low. Season with white pepper to taste.
When sauce is no longer boiling, slowly stir in cream, lemon juice and salt. Simmer for 3 to 5 minutes.
