I'm pretty sure it's called a butterfly knife. I own one, but they aren't as handy as they look if you ask me. You would be better off getting an ordinary folding knife you can open with one hand. Some of them are even spring loaded, but those are against the law in some states. I think you would have the best luck on ebay or through some online knife retailer, or at a gun show or flea market. Yes, as above, a butterfly knife and they are a bit awkward.
