Different brands come out differently. I like Duncan Hines the best. Next time you use the brand you used yesterday add a little extra oil. Also, try baking at 325 instead of 350 and bake a little longer. Check with a toothpick. As soon as it comes out clean, then the cake is done. Don't overbake or it will be dry.

You should follow the directions on the box exactly.
Did you use the high altitude directions when you didn't need to?
Should you have used the HI directions?
Did you measure everything correctly?
Box cakes are so very simple so chances are you didn't measure correctly or used a wrong ingredient. Did you remember the eggs????

You probably overbeat it, causing gluten in the flour to develop. Good for bread, bad for cakes.

Next time, beat the minimum amount of time to incorporate all ingredients.

Make sure you didn't forget the oil or eggs, too.
