The bag contains/retains ethylene, an odorless gas that is also a plant hormone that induces ripening. If you seal up a banana with other fruit, it will hasten their ripening time as well.

It's done to ripen the bananas. By sealing the bananas in the paper sack, it traps the gases in the sack and causes them to ripen sooner.

I believe they do this because the bag omits a gas that is contained inside and kills pests, ie. Spiders as well as makes the banana's ripen to a nice yellow.

They will continue too develope off the tree without the pests such as bugs and such.

You can deliver them this way to the retail location and they will further develope over time.

A major grocer uses large rooms that has some gas vents, and after a certain period of time everyone of them are yellow.
