Does this sentence make sense to you? At the end of the sentence when it says, "...love everything and UNFULFILLED".

No, it doesn't make sense. I've read some of the works of M. Scott Peck, and the "love everything" part doesn't seem to fit.
Here's my best guess at the intent:
"M. Scott Peck found that people who try merely to satisfy themselves, and who indiscriminately try to love everything, end up essentially unfulfilled."

how about if you add "end up" in front of unfulfilled?
"Scott Peck found that the people who try to satisfy themselves love everything and end up unfulfilled."
I tried googling for it but everything I found makes me think it is just someone talking about Peck and not about something he said.

The end is the problem, how 'bout this.

Maybe they "love everything and are unfulfilled." If someone loves everything, then they have nothing that they especially love, leaving them unfulfilled?

",........leave everything unfulfilled", is one edited version! Or, ".........love everything, and end up unfulfilled"!
