the other day i had chocolate moose at a restaurant that was amazingly delicious, anyone have a recipe for REALLY good chocolate moose?

Creamiest Chocolate Mousse

7 ounces bittersweet chocolate, chopped
7 egg yolks, beaten
2 tablespoons sugar
1 pinch salt
7 egg white
1 1/4 cups heavy cream
1 tablespoon kirschwasser (optional)

Place chocolate in a metal bowl over a pan of simmering water. Stir occasionally until mostly melted, then remove from heat, and stir until smooth. Set aside to cool slightly.
In a separate bowl, whip heavy cream to medium stiff peaks, but do not allow it to become grainy. Set aside.
In a separate bowl, whip egg whites with salt until soft peaks form. Sprinkle in the sugar, and continue whipping to medium stiff peaks. Fold in egg yolks and kirshwasser.
Fold in the melted chocolate until completely incorporated, then fold in whipped cream until evenly blended. Spoon into dessert cups, and chill until firm, about 1 hour.

Chocolate-Orange Mousse

1 (1 1/3 ounce) envelope whipped dessert topping mix
1 1/4 cups skim milk, cold
3/4 cup frozen orange juice concentrate, thawed
1 (2 ounce) package fat-free chocolate flavor instant pudding and pie mix
2 tablespoons pecans, chopped, toasted
orange rind, cut into thin strips (optional)

In a medium mixing bowl combine dessert topping mix and 1/2 cup of the milk.
Beat with an electric mixer on high speed about 2 minutes or until mixture forms stiff peaks (tips stand straight). Set aside 1/4 cup of the whipped topping.Add the remaining milk, thawed concentrate, and pudding mix to remaining topping.
Beat on low speed just until mixed.
Beat on medium speed about 2 minutes more or until well mixed.
Spoon the mixture into 6 dessert dishes.
Cover and chill about 10 minutes or until set. To serve, top with reserved whipped topping, chopped pecans, and if desired, orange peel strips.

300 g (1 1/2 cups) dark chocolate, chopped
2 tablespoons milk
6 egg yolks
100 g (scant 1/4 cup) confectioner's sugar
500 ml (2 cups) thickened cream
Fresh berries (optional) to serve

Place chocolate and milk in a heat proof bowl, set over a saucepan of boiling water and stir constantly until melted and smooth (mixture will be quite thick).
Remove and cool slightly. Place yolks and sugar in a large bowl and beat with an electric mixer for 5 minutes, until thick and creamy.

Beat cream with an electric mixer in a bowl then gently fold through chocolate mixture with a spatula until just combined.

Spoon into 12 x 1/2 cup capacity dishes and chill for 4 hours, until set. Serve with fresh berries if desired.

Serves - 12 Preparation Time - 15 minutes Cooking time - 5 minutes Chilling time - 4 hours

This is not an "authentic" recipe as mousse recipes generally go (raw egg whites, etc), but it is REALLY good. Try it and see what you think.

Chocolate Mousse

1 (14 oz. can) sweetened condensed milk
2 (1 oz. ) squares unsweetened chocolate, melted
½ cup cold water
1 (4 serving size) box instant chocolate pudding mix
1 cup whipping cream, stiffly whipped

Prepare and bake two 9” chocolate cake layers according to package directions on cake mix box.

In a large bowl, beat sweetened condensed milk and melted chocolate until well blended. Gradually beat in water and pudding mix until smooth. Fold in whipped cream. Chill at least 1 hour.

This can be served as-is for dessert, used to frost cakes, or layered in trifles.

Polly Welby's Excellent Chocolate Mousse

INGREDIENTS
* 8 ounces bittersweet chocolate
* 10 fluid ounces heavy cream

DIRECTIONS
1. Chop chocolate and place in top of a double boiler, or in a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth. Allow to cool slightly.
2. Whip cream in large bowl with electric mixer until soft peaks barely form.
3. Fold chocolate into cream and spoon into serving dishes. Chill 30 minutes in refrigerator, until set.
