A fight that should have happened in the late 80s-early 90s was Virgil Hill-"Prince" Charles Williams. Each held a share of the light heavyweight title, but Hills' connections wouldn't let him fight the Prince, who was the only light heavy at that time who may have been able to beat him.

Before he got beat by Bernard Hopkins there was talk of Trinidad & Roy Jones Jr.
Lennox Lewis vs Riddick Bowe, that didn't happen because Bowe only fought smaller fighters. When he fought someone his size he got beat up.
Mike Tyson vs Evander Holyfield before Tyson went to jail.
Tyson vs Lewis & or Bowe before jail.
Sugar Ray Leonard & Aaron the hawk Prior

I would have said Forman -Holmes. But, since you already mentioned that one, I'd say Ali - Forman II. Ali ended up fighting Frazier for the 3rd time. Honorable mention goes to Bowe - Lewis.
How about Ray Leonard vs. Aaron Pryor. Oooooh Weeee! Leonard would have had to been ready to fight every second of every round.
