Pancakes
1 cup all-purpose flour
2 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
3/4 cup milk
2 tablespoons melted butter or margarine
2 eggs, beaten
Combine all dry ingredients.
Preheat electric skillet to 380º.
Add butter and milk to eggs.
Add dry ingredients.
Stir just to dampen (not too much).
Adjust milk so it’s thin enough to pour.

READY IN 15 Min
INGREDIENTS
1 cup all-purpose flour
2 tablespoons white sugar
2 tablespoons baking powder
1 teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil
DIRECTIONS
In a large bowl, mix flour, sugar, baking powder and salt. Make a well in the center, and pour in milk, egg and oil. Mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Aunt Jamima. I know this sounds like a major shortcut , but I worked at a restaurant that made our pancakes with this batter and had an editor from gourmet magazine ask for our recipe. If you want to go the scratch route, then use 1 cup self rising flour, 3/4 cup milk, 1/2 cup sugar. Add a little vanilla extract if you would like.

iN LARGE BOWL BEAT EGGS STIR IN BUTTERMILK AND OIL ADD REMAINING INGREDIENTS AND STIR JUST UNTIL LARGE LUMPS DISSAPEAR
LIGHTLY GREASE HEATED GRIDDLE a FEW DROPS OF WATER ON THE GRIDDLE WILL SIZZLE WHEN GRIDDLE IS RIGHT TEMP.
fOR EACH PANCAKE POUR ABOUT !/4 CUP OF BATTER ON THE GRIDDLE cOOK ABOUT 2 MIN OR UNTIL BUBBLES FOR ON TOP OF PANCAKE tURN PANCAKE COOK UNTIL GOLDEN BROWN
IF USING REGULAR MILK INSTEAD OF BUTTERMILK DECREASE MILK TO 1 3/4 CUP INCREASE Baking powder to 4 teaspoons and omit baking soda

Fluffy & Light Pancakes
2 1/4 cups Self-Rising Flour
1/4 c melted butter or margarine
2 tsp. sugar
2 cups milk
2 eggs, separated
Combine Flour, margarine, sugar, milk, and egg yolks. Beat egg whites until stiff. FOLD egg whites into batter. Cook on greased griddle.

pancake mix is much easier, and tastes much better. a whole box is usually only 1 dollar at wallmart :)
