Can a magician or psychic hypnotize someone without their knowing it?

I have seen it done. I was in Las Vegas once with my wife when I saw a man selling pens who was using hypnotic techniques. I told my wife to watch what he was doing carefully. After a few minutes I asked her what she thought and she said, "I want one of those free pens he is giving out". I asked her why she thought they were free. "They are free," she said, but in fact they weren't. The saleman had simply tricked people using hypnosis into believing they were free, while charging $7 each. He had a long line of people paying him money for their "free" pen. I had never seen anyone do that before.

I recognized what he was doing because I experimented with hypnosis in the past and tried it on a few friends, just to see how it worked. The good news is that you can't hypnotize people against their will. In other words, you can't get them to do something they don't want to do. But the bad news is that if someone can get people to agree and go along with what they saying, they can get them to accept "suggestions" and accept them as true. They can seem completely true to them even if their own senses would tell them otherwise.

I spent a few years heavily perfecting my hypnotism. They say the masters are capable of influencing people to the extent that they don't consciously know they're being hypnotized. I myself wanted to move in this direction so I began to perfect my technique. The way it works is to develop a level of suggestibility that the individual (or group) will accept. The way I would go about this would be to get into a conversation with the individual allowing them to get comfortable with me long enough to slowly influence them through the manipulation of their moods and feeling towards me and the commands I would slyly give them. I would perform this on my dorm resident advisers and to test them out I would have them break the dorm rules and make them feel good about it.

No, people must be consenting and willing in order to be hypnotized and told what to do.

No. Hypnosis requires cooperation, willingness, and suggestibility.
By the way: "Magicians" are good at sleight-of-hand and illusions, as well as misdirection. There is no such thing as "magic." And "psychics" are really, really good guessers, as well as first-class bullsh*t artists.

Yes. Not just anyone. Some people can not be hypnotized. Weak minded people can be hypnotized without knowing it.

You can, however, influence peoples thinking without them knowing.

For example with subliminal images.

My guess is no. I don't see how anyone could have this power over anyone else.
