Get some fresh snap green beans, onions and bacon. Cut the bacon in small pieces and saute with the onions. About 5 min. before the onions are completely sauteed add a little butter (or olive oil), the green beans and what ever seasoning you prefer and cook for about 5-10 min on a medium heat. Turn heat off cover and let them sit covered for about 5 min. Good Luck.

Yummy Pesto Mashed Potatoes
INGREDIENTS
6 medium russet potatoes, peeled and cubed
1 tablespoon and 1-1/2 teaspoons butter
1/4 cup and 2 tablespoons milk, or as needed
1 tablespoon and 1-1/2 teaspoons basil pesto
DIRECTIONS
Place the potatoes into a saucepan with enough water to cover. Bring to a boil, and cook until tender; about 10 minutes. Drain, and mash with butter and milk to your desired consistency. Mix in pesto, and serve.
Parmesan Tomatoes
INGREDIENTS
4 ripe tomatoes, sliced
4 tablespoons mayonnaise
4 tablespoons Parmesan cheese
1 tablespoon Dijon mustard
1 tablespoon brown mustard
1 teaspoon dried oregano
salt and pepper to taste
1 teaspoon chopped fresh parsley
1/4 cup shredded mozzarella cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Arrange tomato slices in a single layer on a baking sheet. In a small bowl, mix together mayonnaise, parmesan, Dijon mustard, and brown mustard. Season with oregano, and salt and pepper to taste. Use a spoon to top each tomato slice with a small amount of the mayonnaise mixture. Sprinkle with mozzarella , and then top with parsley.
Bake in preheated oven for approximately 15 minutes, or until golden brown. Serve immediately

How about Greek Pasta Salad?
1 package (12oz) colored corkscrew pasta
1 cucumber thinly sliced
1c. crumbled feta cheese
1/2 c. olive oil
1/2c. sliced black or Greek olives
2 tbl. lemon juice
1/2c. sliced radishes
2 tbl. chopped fresh parsley
1/4c. sliced green onions
1-2 cloves minced garlic
1 tea. oregano
In large bowl toss hot cooked pasta & cheese & olives & radishes & onions and cucumber until well mixed. In small bowl or jar combine the rest of ingredients, toss with pasta until evenly coated I like to save a little to pour on just before serving. Chill 1-2 hours
