PANCAKES
2 eggs
2 cups all-purpose flour
2 3/4 cups milk, *see note
1/4 cup vegetable oil
2 tablespoons melted butter
3 tablespoons sugar
1 1/2 tablespoons baking powder
1 teaspoon salt
Beat egg with hand beater until fluffy; beat in remaining ingredients just until smooth. Grease a heated griddle.
Pour about 3 tablespoons batter from tip of large spoon or from pitcher onto hot griddle.
Cook pancakes until puffed and dry around edges (tiny bubbles will begin to form).
Turn and cook other sides until golden brown. Flipping once should be enough. The first pancake isn't always the best one.
Note: Buttermilk, yogurt, or sour cream may be substituted for some or all of the milk.
This may cause the batter to be too thick or too thin; adjust accordingly by adding milk to thin or flour to thicken. When you use a sour ingredient, cut the baking powder by 1/2 tablespoon and add 1/2 teaspoon baking soda. If you don't have buttermilk, you can add powdered buttermilk to the milk (a good thing to have on the shelf).
Makes about 18 four inch pancakes.

1 cup flour (can be all whole wheat, for more nutrition) 1 egg 1 cup milk 1 tsp baking powder 1/2 tsp baking soda 2 Tbs oil 2 Tbs sugar, honey, maple syrup, etc. 1/4 tsp salt 1 cup fruit or chocolate chips, optional Mix. Fry until lightly browned on each side. Serve while hot. Serves 1-2 people. I figure, 2 eggs for every 3 people, and multiply the other ingredients accordingly. I cook up all the batter immediately and refrigerate any leftover pancakes. They heat up decently in the microwave the next day.

Golden Pancakes
INGREDIENTS
6 eggs
1 cup creamed cottage cheese
1/2 cup all-purpose flour
1/4 cup milk
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
1/4 teaspoon salt
DIRECTIONS
In a blender, combine all ingredients. Cover and process on the highest speed for 1 minutes. Pour batter by 1/4 cupfuls onto a greased hot griddle. Turn when bubbles form on top; cook until second side is golden brown.

The best pancakes to me are from a box, a box of Bisquick. Here's the recipe:
2 cups Original Bisquick® mix
1 cup milk
2 eggs
1. Heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease with cooking spray, vegetable oil or shortening. (Surface is ready when a few drops of water sprinkled on it dance and disappear.)
2. Stir all ingredients until blended. Pour by slightly less than 1/4 cupfuls onto hot griddle.
3. Cook until edges are dry. Turn; cook until golden.
Note: If you like thin pancakes, use 1 1/2 cups milk.
(Total time will vary; cook or bake time is per batch.)
High Altitude (3500-6500 ft) No changes.

Double-Berry Pancakes:
25 min 25 min prep
12 pancakes
1 1/2 cups all-purpose flour
2 tablespoons sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, separated
2 cups buttermilk
1/4 cup butter, melted
1 cup rinsed fresh blueberries (or un-rinsed if using frozen)
1 cup rinsed fresh raspberries (or un-rinsed if using frozen)
real maple syrup
1. In large bowl, combine dry ingredients.
2. In another bowl, mix egg yolks, buttermilk and butter until well blended, then stir this into the flour mixture.
3. In another large bowl beat egg whites on high speed until soft peaks form, then fold into batter- gently but completely; there should be no white streaks remaining.
4. Cook pancakes on 350 degree nonstick griddle, using 1/3 cup of batter per pancake – evenly arrange 1 tablespoon each of blueberries and raspberries onto each pancake.
5. Cook until bottom is nicely golden brown and edges are dry then flip and cook around 2 minutes more.
6. Serve with real maple syrup.

1 cup flour
1 egg
1 cup milk
2 tablespoon sugar.
Mix all the ingredients, if too thick add a little milk if too thin add a little flour.
Add a hint of vanilla essence if you like.
Hit up a pan, you might grease it a little but I dont. I add a little oil to the mix, about 1 tablespoon.
Then put about 1/3 of a cup on the pan, when its not sticking to the bottom then turn. Ans after 20 seconds to 1 minute, its done.

½ cup butter or margarine, melted and slightly cooled
4 Tablespoons sugar
½ teaspoon salt
2 Tablespoons grated lemon zest (2 small or 1 large lemon)
Juice from lemon
In large bowl combine egg yolks, flour, cottage cheese, melted butter, sugar, salt and lemon zest and lemon juice.
In a separate bowl whip egg whites until soft peaks form. Carefully fold egg whites into batter mixture.
Cook on large griddle (prepared with cooking spray). Using ¼ cup measuring cup pour batter onto hot griddle.
Cook until bubbles form and bottoms are lightly brown. Turn over and cook until bottoms are lightly browned.
Serve immediately garnished with fresh raspberries or blueberries and powdered sugar.
Makes 6 servings (3 pancakes each).
Favorite Aunt 24, our recipes are so similar, I will have to try yours! It also sounds good.
