Is boiling in the shell at all healthier than poaching?

I remember reading somewhere once that poaching an egg is the healthiest way of cooking an egg, and scrambling is the least healthy because of added butter and milk (I don't think omlettes were included in that list otherwise that would probably really be the least healthy). Fried eggs, while not as healthy as poached or boiled, aren't actually too bad because the egg doesn't soak up much of the oil it is cooked in.

Raw, if you really know your source. They're both fine, poached and shell-boiled. You know that the white itself has almost all the protein in it, and no cholesterol? But the yolks have vits A, D, K and E, iron, zinc calcium and magnesium. Eggs aren't like vegetables. Poaching won't take but a neglible factor of those away. Same caloric values cooked either way, too.

I would have thought they'd be about the same boiled or poached as nothing is added in the cooking process.

The shell of the egg is porous, so ther is little difference between boiling and poaching, but for myself the healthiest and safest way is a hardboiled egg,and even healthier is to eat only the eggwhite, as the egg yolk contains cholesterol and is bad for high blood preassure.

Boiling in the shell versus poaching doesn't really have a nutritional difference. As long as it's not cooked in butter or oil, you're good.

Poach it in boiling water or scramble without oil.

poaching, make sure you add a little vinegar to your water. i will help in the coagulation of the proteins in the egg, so you don't get all the wispy stuff around the edges and make sure you give the water a gentle stir before you drop in the egg, the motion keeps the egg centered.

egg yolks aren't bad. but only use 1 yolk per 1-2 whites. you could also through in some spinach its chalked full of minerals and a natural cleanser, some peppers or pepper flakes wouldn't be a bad idea either, you burn 1/4 more calories digesting hot foods!
