Strawberry shortcake
225g [8oz] self-raising flour
1 tsp baking powder
50g [2oz] butter or margarine
25g [1oz] caster sugar
1 medium egg
5 tbsps milk
1 tsp vanilla essence
For the filling . . .
225g strawberries
150ml double or whipping cream
3 tbsp greek yoghurt
icing sugar
Heat oven to 220°c,425°F,,gas mark 7. Prepare the baking tray. Sift the flour & baking powder into a bowl. Roll the dough out and make a circle shape [around 8in width] and bake for about 12-15 mins.
Rinse & dry the strawberries and cut into thick slices
Take the shortcake out of the oven, when cool, cut in half horrizontally.
Slice the top half into 8 wedges.
Pour the cream into a bowl, whisk until thick then add yoghurt. Spread half of the cream onto bottom half of the cake, add strawberries, then use the rest of the cream.
Prepare the wedges on top and sift icing sugar over to serve.
++Strawberry cream gâteau++
4 oz. self-raising flour
pinch salt
4 oz. butter or margarine
4 oz. caster sugar
2 eggs, lightly beaten
For the filling & decoration:
8 oz. strawberrys
1/2 pint double cream
Sieve flour & salt. Cream fat & sugar until light & fluffy, then beat in eggs. Fold in dry ingredients with a metal spoon. Divide equally between 2 well greased 6-7inch sandwich tins. Bake in centre of a moderate oven for 25-30 mins.
Hull the strawberries, reserve half for decorating the top and roughly chop the rest. Whip the cream until it leaves a trail from the whisk
Pull the cakes together filling the centre with half of the cream and all of the chopped strawberries. Place the whole strawberries on top of the cake and, using a large star tube, swirl cream aroud the strawberries. As an alternative, when strawberries are not in season, use a tin of peaches, well drained.

This sauce can be used to spoon over yogurt with fresh strawberries, ice cream, pound cake or your favorite dessert. Great as topping for pancakes and waffles too.
2/3 cup sugar
1 pint strawberries, washed and hulled
1/3 cup water
1 tablespoon lemon juice
Place sugar and 1/3 cup water in a small saucepan, stir and bring to a boil. Simmer until the sugar is completely dissolved.
Allow the syrup to cool completely. Hasten cooling by setting pan in a shallow bowl of ice water.
Place half the berries in the jar of a blender; add lemon juice and all the cooled syrup. Puree until smooth.
Press through fine sieve to remove some of the strawberry seeds, if desired.
Coarsely chop remaining strawberries and add to strawberry puree. Serve.
Can be stored refrigerated, in tightly covered containers for up to 4 days.

Hmm.. cut them up and put them in a bowl. Add 1/2 cup of sugar and 1/2 cup of water and chill in the fridge. Get some pound cake and slice it up and serve with the strawberries. I also like to make Strawberry kool-aid and add fresh strawberries, or also fresh squeezed lemonade with strawberries :)
Lots of fun!

If you're bored. Put them inside some balloons and fill up with water. Get friends over. Throw at each other. Collect strawberries. Whoever has the most, wins. Very Fun. Not to be played inside. Very wet!

Rinse and top them and place them (1 cup at a time) in 1 quart zip-lock bags with a dash of lemon or lime juice and 2 tablespoons of sugar then freeze flat for later use as ice in lemonade/punch,to make sorbet or even to bake a pie or make jelly. They will keep this way for about 4-6 months. Be sure to label them with the date so you know when to toss them if you don't use them up. Good Luck!
