Me and my kids call our marinade 'Georges Marvellous Medicine' after the Roald Dahl book. Basically we take anything we have out of our cupboards and mix it together passing the ingredients around to each person! The main things I always put in though are good quality olive oil, balsamic vinegar, vegetable oil, malt vinegar, chilli powder, tomato puree,fresh garlic, fresh ginger, lots of honey, soya sauce. Then we experiment each time adding things like Thai chilli dipping sauce, marmite, different fresh herbs, sometimes fresh garlic, tomato sauce the list is endless each one is different all have a yummy flavour but especially all have a great chilli kick!

I found this one on a website some time ago.. it has a good flavor.. as you can see I was not the original perons that created it.. but it is good..

Chicken in Lime & Chilli Marinade
Chef: Lyn Battle
Sweers Island Resort

This is a nice fresh dish for these hot evenings. Easy to prepare and cook and it's very, very tasty!

Degree of difficulty: Low

You need:
400g chicken breast fillets
spray cooking oil
2 tablespoons fresh coriander leaves, chopped
1 lime, cut into wedges for serving

Marinade
1 teaspoon finely chopped garlic
2 teaspoon finely chopped ginger
1 tablespoon soy sauce
1 teaspoon finely chopped red chilli
2 eschallots, finely chopped

Method:
Combine marinade ingredients in a bowl and whisk together.

Add the chicken and mix well.

Cover and refrigerate for at least an hour.

Drain the chicken, reserving the marinade. Heat a frypan, spray with oil and cook the chicken for about 3 minutes each side, basting with marinade.

Arrange the chicken on a plate with some noodles and steamed vegetables, and a lime wedge on the side.

Mexican Steak Marinade Recipe

Ingredients:
3/4 cup orange juice
3/4 cup V-8 juice
6 T lime juice
6 T olive oil
3 tsp paprika
3 tsp ground cumin
3 tsp oregano
1 1/2 tsp crushed red pepper flakes
6 cloves chopped fresh garlic

Directions:
Combine all ingredients and stir well. Marinate steaks in a food-safe plastic bag or non-reactive glass bowl in the refrigerator for at least four, and no longer than twenty-four hours. Grill or broil steak to desired doneness.

Mango Chilli (Angry Fruit)

roughly chop half a ripe Mango, purée the other half,
Chop 3 midium red chillies and 3 green
Chop some corriander, basil, cummin and oregano
crushed ginger, lemon grass and garlic(not too much)
add the juice of half a lime and 1 teaspoon garam masala

Mix above together

marinade meat of your choice for 1 hour at least
chuck on the Barbie and Baste in mariade half way through cooking

Chilli Lime and Garlic Marinade
1 tablespoon olive oil
2 garlic cloves, crushed
1/2 teaspoon chili paste
1/4 teaspoon cayenne pepper
1 teaspoon paprika
limes, juice and zest of

1. Mix ingredients together in a dish.
2. Rub over meat/fish/tofu and leave to marinade.

Coffee and Chili Marinade for Beef Steak
Ingredients:

3 cups strong brewed coffee, room temperature (don’t use decaf or instant)
6 oz Soy Sauce
5 cloves garlic, minced
1 oz garlic powder
½ oz crushed chili peppers (optional)

Combine the ingredients in a large bowl. Add the steaks, pushing them down so they are well immersed in the liquid. Cover the bowl with plastic wrap and refrigerate for 2-12 hours.

Ingredients
2 chopped, deseeded fresh red chillies
1 clove crushed garlic
1 tsp ground black pepper
60ml/2fl oz white wine vinegar
1 tbsp caster sugar
2 tbsp sunflower oil
1 tbsp freshly chopped parsley

also
1 tsp. chili powder
1 tsp. salt
2 tbsp. brown sugar
2 tbsp. wine or tarragon vinegar
2 tbsp. Worcestershire sauce
3 tbsp. ketchup
1/4 pt. water
Few drops Tabasco sauce

Combine all the ingredients together with a fork or wire whisk to thoroughly blend. Pour over the food and pierce meat with fork, turning from time to time until required. Refrigerate. This is a wonderful marinade for barbequed steaks, spareribs, chops or roasts.

I find it easiest to get a sweet chili sauce and mix it with one part soy...the nice thick rich type soy sauce....and then put in one part balsamic or white wine vinagar and a tablespoon of ground nut oil. A teaspoon of dark sugar will make it nice and sticky for ribs. I leave it on the meat overnight in the fridge and it works pretty well.

For stuff that the kids will happily eat I susbsitute the chili sauce for paprika and tomato puree, put in a dash of lea an perrins and a spoonful of ketchup, this also makes an excellent and cheap bbq sauce if you go heavier on the paprika it can have quite a kick for sensitive souls.

10 red chillies, 6 cloves garlic, 15 shallots,10 gms ginger, 10 gms fresh turmeric, 2 pcs. tomato, 1 tbsp coriander seeds, 10 candlenuts, 1 tsp dried shrimp paste - put all ingredients in a processor until it forms into a paste.

Saute 4 tbsp cooking oil, 3 tbsp tamarind pulp, 2 pcs kaffir leaves, 2 stalks lemongrass and chilli paste....

Use this marinade with any fleshy kind of fish.... (Not only hot but spicy as well!)

Steak in Chipotle Marinade
* 1/2 cup honey
* 1/2 cup lime juice
* 1/2 cup chopped cilantro
* 1/4 cup Dijon mustard
* 2 tablespoons minced canned Chipotle peppers in adobo sauce
* 2 tablespoons sauce from peppers
* 6 cloves garlic, minced
* 1 teaspoon ground cumin
* 1 teaspoon salt
* 1/2 teaspoon ground allspice
* 1/2 teaspoon black pepper
* 4 steaks




METHOD

Combine all ingredients in a small bowl. Mix to combine. Pour over steaks, cover and refrigerate at least two hours, or overnight if possible.

At cooking time, remove steaks to a platter, pour marinade into a small saucepan. Bring to a boil over low heat and simmer 5 minutes.

Reserve half the sauce on the side. Using remaining half, baste steaks while cooking.

When steaks are done, pour reserved marinade over steaks before serving.

Serves: 4
