What does this stands for? I think the first two letters stand for Jesus Christ, but I'm not sure about the rest.

You have transcribed it wrong. It is probably ΙΧΘΥΣ (Σ=S, not E). This word means fish, but it has been associated with Jesus as a symbol in the first centuries, because as initials it may be interpreted as

Σωτήρ

The word is transliterated as ichthys meaning "fish"? What? It's Ikhthys = fish. There is no "ch"(as in kitchen) in Greek! The Romans messed up the beauty of the Greek language. And confused the whole world, with ch as in "kitchen" with kh as in "ikhthys".

Ιησούς = Iesous = Jesus
Χριστός = Khristos = Christ
Θεού = Theou = god
Υιός = Yios = son
Σωτήρ = Soteer? = savior?

cpinatsi is right. The word is transliterated as ichthys meaning "fish" This is why the fish is a symbol for Christians being used as a sign of recognition during the early times of persecution.

I think you mean IXΘΥΕ. Well this words means fish but is used rarely here in Greece. The whole word symbolizes Jesus Christ I think.
