Well since its sour to begin with, how can you tell? Obviously if it has mold, its a problem. But let's assume the sour cream has been kept in the fridge all the time.

USUALLY and i do say USUALLY ther is a best by date on the package. But lets say for some dumb reason you dont have the package..stick to an easy rule...dont eat it 14 days after it has been opened. It is a really really SAFE way to know you wont get sick

When I buy a carton of sour cream, I always check the "expiration date" so I know it's going to last a while. You are right if you see green inside when you pop the lid....it's time to toss it. I've never had it long enough to show any other signs of spoiling. The only thing I'd guess would be a terrible smell ! Like rotten spoiled milk. YUCK

It will usually start to smell funny. I acn't really describe the smell though, just not right. Just because you see some liquid has seperated though does not mean it is bad.

it will start to turn yellow and the smell will start to get really strong. check the lid because thats normally where i first see mold
