its all the things you mentioned. mostly it has to do weith teo things, the feed and if they cows are given rBGH. That is a BOVINE GROWTH HORMONE. Its what they give some cows to make them produce milk. Its sick and BAD for our bodies. Organic milk might even have a different taste from the regular kind too.

Milk flavour has a great deal to do with what the cows eat and where they eat it. The flavour of milk from the same herd can change according to time of year.
In Spring and Summer, cattle in Ireland and UK are usually put out to pasture. This means fresh sweet grass is the main bulk of their diet.
In the dark months of winter, most cattle are eating whatever the dairy farmer has been able to store away. This could be a mix of hay[s], cattle feeds and so on including silage.
Personally, I've never understood the desire to drink skimmed milk. Skimmed milk in my childhood in the Kent countryside was fed to the pigs. It is unfit for babies and if a baby were to be fed on skimmed milk, it would die.
Best milk comes from Jersey herds and is presented in a glass bottle with a gold top.
Best cream is Cornish and/or Devon clotted.
Strange ain't it! the people of Cornwall and Devon, living in an area with a high natural fat diet, have the least heart problems among the nation.

Different preservatives maybe? No milk in the supermarket is just cows milk, theres other stuff in it to keep it fresh for longer. Other than that, different cows? Different brands will get milk from different farms so maybe that affects the taste.

Iknow what you mean luv. I find womens breast milk differs as well, im partial to "crystals" milk on me cornflakes yet that fat slag with the 14 kids down our way, well, her breast milk is excellent in ya morning coffee, know wot i mean? Maybe its something to do with the chemical reaction of the emulsifying enzymes in the basic hypersturture of the overall calibration. Or it could be that you should get out a bit more ya sad "cow" if thats all you have got to think about. What are you? Generally it's a combination of the feed and the breed. Probably very little to do with hormones or the processing, except if it is super-pasteurized to give it longer shelf life.

idk mom.. but does it really matter? haha find one that tastes good to you and drink up..
ive never noticed a difference but i dont really pay attention when i have it and its usually in cereal anyways ... since i cant have it plain(well... not SUPPOSED to have it at ALL. haha)
so just be glad u can drink it at all... hehe
