The wife's maiden name follows her husband's name in Hispanic countries.

The husband's name is his father's followed by his mother's.

The wife and children name is the husband's followed by the wife's name

until the daughter gets married

then she drops her mother's maiden name, pushes her father's to the right and puts her husband's name in front.

That is a legal requirement in Hispanic countries.

You should use the name that you plan on going by after you are married. So if you are keeping your maiden name, put that on your place card. If you're taking his name (even though you haven't legally changed it yet, you can certainly start using it socially), then put your new name on the place card. Or if you don't even want to deal with it, just put "Bride" and "Groom" on your place cards. I wouldn't worry too much about this, honestly. None of your guests are going to be paying the least bit of attention - they will be much more interested in finding their own seats then how your name is listed on your seat.
