I once worked in the dairy department of a large supermarket. When milk expired, we would hold it for a few days in a separate part of the cooler, until the sales rep from that particular dairy could come by and count up the expired ones. He'd issue a sales credit on them, then they'd get tossed. I know it's wasteful, but at least counting the leftovers on a weekly basis gave us an idea on how many to order in the future, and thus hopefully cut down on extras.

Milk that has expired is thrown out. The only difference is if it is a store brand or major brand. If it is a store brand the milk is dumped down a drain and recorded in a log book for manager's knowledge. If it is a major brand, the milk is dumped and either the whole carton or the barcode is sent back to the distributer for a partial refund.

The milk company gives the grocery store credit for it, then adjusts the par levels so they don't deliver as much the next time. Then, some milk company donate it to shelters... some just destroy it.... Milk is still technically good 10 days past its expiration date if kept under refrigeration.
