If you cook them in oven, spray the tray with cooking spray first then add your fries in a single layer. Spray the tops of the fries with more cooking spray and bake a little longer.

For the oven, it is often suggested that you crumple a big piece of aluminum foil and put that on your cookie sheet. Spray it with non-stick pan spray. Add the fries in a single layer, then spray them lightly with the same spray or with any cooking oil you prefer using. For the last 5 minutes, increase the temp by 25 degrees Fahrenheit (or 15 Celsius.) Turn the oven off and let the fries sit a couple of minutes before removing them.

If cooking in the oven, use a pizza stone, flip them over half way through package directions....added benefit...it helps season the pizza stone. If frying, sounds like you're putting them in before the oil gets hot enough. You can get a thermometer - or just throw in a test fry. If it starts to sizzle immediately...the oil is hot enough. PULL OUT THE TEST FRY!.. .since it will have been cooking the longest...it will be toast!

I bake mine in extra virgin olive oil. I spray some on the bottom of the pan and on top of he fries, until it is golden brown. It makes them nice and crisp. I also do this with chicken tenders, and it is much better for you than deep frying.

I'm assuming that you're cooking them in the oven. Cook them according to the package directions then put them under the broiler for about 3-4 minutes, turning them often.

Buy slicing them thinner and adding them raw to oil which has been well warmed up on a high temperature, but not too high.

I also noticed that it depends on the type of potatoe you use, try using a different one.

Let the oil get HOT then put them in and just let them go until they get crispy then put onto a plate with a paper towel or something to soak up the grease.

According to Emeril Lagasse....On the Food Network...He says you have to fry them twice....360 degrees in the deep fryer...cook them about 3 min. Take them up and let them drain...Then drop them back in until golden and floating...then drain on paper towels...

u could warm them then fry them or the other way around.
