Baked, mashed, or boiled. Or scalloped potatoes if she wanted to bother with making the sauce and baking it.
Actually, scalloped potatoes is the perfect side for that! (my mouth is watering...)

boil potatoes until almost soft, drain place them in oven safe dish and drizzle olive oil, chopped parsley, garlic, onion and black pepper, bake in hot oven til nice and toasty brown.
