Make this recipe tonight, let it sit in the fridge, it's better the longer it sits!
HAM AND EGGS STRATA
20 slices white bread, crusts removed
4 c. cooked ham, cubed
10 oz. Cheddar cheese, grated
10 oz. Swiss cheese, grated
6 eggs
3 c. milk
1/2 tsp. salt
1/2 tsp. onion salt
1/2 tsp. dry mustard
1/2 c. butter, melted
3 c. crushed Corn Flake crumbs
1ST LAYER: Cut bread slices in half and arrange 1/2 the bread in a greased 9 x 13 inch pan.
2ND LAYER: Sprinkle half of the ham over bread.
3RD LAYER: Sprinkle on 1/2 of the Cheddar and Swiss cheese.
Repeat all three layers. Beat eggs, milk and seasonings. Pour over the layers. Cover and refrigerate overnight. Before baking make topping of melted butter and Corn Flake crumbs and sprinkle over strata. Bake at 375 degrees 50 to 60 minutes. Let stand 10 to 15 minutes before serving.

Omeletes are really good and you can also fry up bacon and sausage as sides. Here's my omelete recipe:
5 - 6 eggs (whisked)
1/4 - 1/2 c. shredded cheddar
1/4 c. bacon bits (the softer ones) or 1/2 c. diced ham
1 tblsp. milk (optional)
non-stick cooking oil or 1 tblsp. margarine
Combine all ingredients; spray non-stick or melt margarine in skillet. Heat skillet and add ingredients. Use spatula to turn omelet and fold after it gets to cooking (bubbling). Cook until right before it starts to brown, and slide onto plate.
Optional ingredients: cooked sausage, onions, green or red peppers, or American cheese.

Scrambled Eggs and Tomatoes
INGREDIENTS
2 large eggs, beaten
2 tomatoes, coarsely chopped
1 1/2 teaspoons sugar
salt to taste
1 dash soy sauce
DIRECTIONS
In a skillet over medium heat, scramble eggs until almost done. Remove to a plate.
Return skillet to medium heat, and stir in tomatoes. Cook 2 to 3 minutes. Stir in sugar, salt, and soy. Return eggs to skillet; cook, stirring, about 1 minute more.

Breakfast Sausage
INGREDIENTS
2 teaspoons dried sage
2 teaspoons salt
1 teaspoon ground black pepper
1/4 teaspoon dried marjoram
1 tablespoon brown sugar
1/8 teaspoon crushed red pepper flakes
1 pinch ground cloves
2 pounds ground pork
DIRECTIONS
In a small, bowl, combine the sage, salt, ground black pepper, marjoram, brown sugar, crushed red pepper and cloves. Mix well.
Place the pork in a large bowl and add the mixed spices to it. Mix well with your hands and form into patties.
Saute the patties in a large skillet over medium high heat for 5 minutes per side, or until internal pork temperature reaches 160 degrees F (70 degrees C).

If your looking to wow him and spend time with him instead of scrubbing pots, get a few of his favorite fruits and cube them, put them in your favorite margarita glasses or desert dishes and drizzle flavored yogurt and a tiny bit of honey over them, add a sprig of mint and chill. My hubby loves to have eggs in a blanket. take his favorite bread (sliced), butter one side and cut out a shape in the middle. a circle with a knife works fine too, put it butter side down in a not too hot frying pan. crack an egg in the middle and let it simmer for a minute. put a lid on it and shut the heat off. let it rest for two minutes. If he likes them really well done you can try and flip it but then you might break the egg. Serve with an icy cold glass of mimosa and a coffee with just a nip of bailey's if he drinks.

One of my FAVORITE breakfasts is pretty simple. Take some of your favorite veggies: green peppers, mushrooms, zucchini, onions, etc. and dice them and lightly sautee them (takes two seconds to do) then put an english muffin in the toaster...while that's toasting, take out your veggies, put them on a dish and make two sunny side up eggs. When your english muffins are done, put either butter or cream cheese on them, then the veggies and put one egg on each... DELISH!

1) Move to the UK
2) Go to a good butcher
3) Make him sausage, bacon, fried egg, fried slice, tomatoes, beans, black pudding and fried mushrooms with thick brown toast and butter. A glass of grapefruit juice and some tea with milk and sugar wouldn't go amiss either.

MIX UP SOME EGGS AND ADD BACON, CHEESE, TOMATOE, ONION, OR WHATEVER. THEN POUR IT ALL IN BAG AND SET BAG IN SOME SIMMERING HOT WATER UNTIL DONE. UNZIP BAG AND OUTCOMES YOUR OMELET. SEASON TO TASTE.
