The ideal for clear legibility is black lettering on a white background, as used at the front.
However the plates are reflective, and it is illegal under UK law to show any white light source (a light, or a reflector) at the rear other than a reversing light. This makes a white reflective number plate illegal at the rear, so another colour had to be chosen. Yellow was next-best for legibility.

allan_j's got it. In an ideal world it'd be white on the back too (it reflects better) but in this country you're not permitted to show white to the rear except reversing lights. That includes reflectors.

So you can tell in the dark whether the front or the back of the car in front is facing you, handy to know on a foggy night.

The white indicates the vehicle is coming towards you (that also goes for headlights and reversing lights)

We have become so pollitically correct that we cannot discriminate against yellow so we have to have white as well.
