when i was young my granfather made cucumber salad, i am 5 months pregnet and i got a craving for it but i cant find any cucumber salad recipe that looks like his can any one help me please...

all i know he had it in a big bowl and it had Vinegar in it....other than that i dont know...

This recipe is for both cucumber and tomato.

Oil
Vinegar
Pinch of sugar
Salt and Pepper to taste
Onions sliced thin
Oregano

Cut cucumbers in thin slices.
Add liquid ingredients only to coat.
Add dry ingredients to taste.

Marinate in refridge for at least an hour.

I don't know if it is a German recipe or not, but I know my Russian roomate always makes a cucumber salad by: Peeling 3 large cucumbers and dicing 1 tbsp. of white vinegar 1 tsp salt 1 tsp white pepper 1 cup sour cream *you can also peel 6-8 radishes and dices small for vitamins since cucumbers do not have a whole lot of vitamins--radishes also make the salad larger and last longer during parties. MIX everything together garnish each serving with Tbsp of chives DELICIOUS!!

everyone that answered with a recipe using vinegar and sugar have the right idea. You might also want to add in some black sesame seeds and rock salt (sesame salt). It adds a twist with a bit more texture.

INGREDIENTS
2 cucumbers, peeled and thinly sliced
1/2 red onion, thinly sliced
1 1/2 cups water
1/2 cup rice wine vinegar
1 teaspoon white sugar
1/4 teaspoon sesame salt
DIRECTIONS
Combine cucumbers and red onion in a salad bowl.
In a small bowl, stir together water, rice wine vinegar, sugar, and seasoned salt. Pour over vegetables. Chill for 1 hour. Serve chilled or at room temperature.

When I make a cucumber salad, I always peel the cucumber first, cut the cucumber in half and then take a grapefruit spoon with serrated point and scrape out all the seeds from both halves. Throw the seeds into the garbage. Then cut up the cucumber into bite size chunks. Add a few chopped onions and capers. I like the Zesty Italian dressing.

1/4 teaspoon dill weed
1 tablespoon sugar
1/4 cup white vinegar
1/4 cup mayonnaise

Combine cucumbers with other ingredients and chill for 1 to 2 hours, stirring occasionally.
Serves 4

Do you know what kind of dressing it had or what the ingredients were other than cucumber? Here are a few salads, I hope at least one of them is right

CUCUMBER ONION SALAD

1 large cucumber
1 medium onion
1 large tomato
zesty Italian dressing
wine vinegar
salt and pepper to taste

Cut up cucumbers, onion, and tomato in small cubes. Salt and pepper as desired. Add 1 tbsp wine vinegar.
Add enough Italian dressing to cover (more or less to desired taste).

2 large cucumbers, peeled and sliced paper thin
1/4 teaspoon dill weed
1 tablespoon sugar
1/4 cup white vinegar
1/4 cup mayonnaise

CUCUMBER SALAD

2 c. cucumber chunks
1 c. celery, chopped
1 tomato, cut up
1 can kidney beans
1 c. salad dressing

Mix cucumber, celery, tomato and salad dressing together. Add kidney beans just before serving.

My husband's grandmother was from Maysville Ky and often made cucumber salad. My husband still likes it:

To make it, we use:
baby cucmbers
red onion sliced thin
vinegar
sugar
and water

The exact amounts are to taste. i start with about a 1:0.5 ratio of water to vinegar and maybe add 1-2 tablespoons of sugar , mix in about a 1 qrt conatiner (cool-whip size) of sliced veggies. then i just add more vinegar or sugar till it is sweet-tart enough.... adding a little more water if i overdo the vinegar.

i just make sure the veggies aren't drowning in the water mix - the vinegar solution will extract more water from the veggies as it sits

I make one that sounds similar to what you are craving......Take & slice cucumbers thin, then slice a medium onion ( I like the videla - sweeter) & layer in bowl. Pour over a mixture of white vinegar, sugar & mustard seed. Chill in fridge for a couple of hours before serving - even better if you let it marinate overnight........Yummy!!

I don't know if this is what you want but Herr is mine.Slice cucumber thinly,then add sweet onion sliced thin.Pour raspberry vinaigrette over and put 2 teaspoons sugar on top.Stir and put in fridge for 2 hours.Great for a BBQ try it...

I love mayonnaise. And sugar. I have looked for this recipe for years. Is 4 sliced cucumbers, 2 tablespoons sugar, 1 tsp salt, 1 tsp of lemon juice and 1/2 cup mayo. Stir and chill well. I add 1/2 tsp dried dill weed. Only if you like. Everyone loves. And finely diced onions to the side for the onion lovers. This is a classic for everyone. I know of no one who hasn't liked it.
