Hi !!! (I FEEL LIKE A NUT)
Here is one recipe that I have made...I like the chocolate made from the eveporated milk & chocolate chips...

Almond Joy Cake
Makes: 8 servings
Prep Time: 30 minutes
Cook Time: 35 minutes
Ready In: 1 hour, 5 minutes

Almost everyone remembers the Peter Paul Candies logo........... "Sometimes I feel like a nut - Sometimes I don't. Almond joy has nuts - Mounds don't!" This cake is so reminiscent of the Almond Joy candy bar.


~~Almond Joy Cake~~

1 package chocolate cake mix
30 large marshmallows
1 cup evaporated milk
1 cup sugar
1 bag 14 oz coconut

~~Frosting~~
1 1/2 cup sugar
1/2 cup evaporated milk 1/2 cup oleo, butter or margarine
1 bag 12 oz chocolate chip 1 cup nuts


Directions
The cake:

Bake cake as directed on box in a deep 9 X 13 pan. If you use just what the recipe calls for the marshmallows there shouldn't be a problem in overflow. Some may want to use the whole bag of marshmallows - this is not recommended. Combine one cup evaporated milk, marshmallows, and one cup sugar and cook until melted. Add coconut and pour over hot cake.

Frosting:
In a medium saucepan bring 1 1/2 cup sugar, 1/2 cup evaporated milk and 1/2 cup oleo to a boil and then remove from heat. Add chocolate chips. Stir until melted. Add one cup chopped nuts. Pour over warm cake and let sit. Serve after cake has cooled. This cake is very very rich and should be served in the smallest serving size possible.

---------------AND THIS ONE, MADE WITH BUTTERMILK...

PETER PAUL MOUNDS CAKE

2 1/2 c. plain flour
1 c. buttermilk
1 tbsp. baking powder
2 tsp. vanilla
2 c. sugar
1 tsp. soda
1/4 tsp. salt
1 c. butter
5 eggs
3 sqs. unsweetened chocolate, melted

Mix and bake at 350 degrees. Makes 3 layers.

Coconut filling for Peter Paul Mounds Cake:


1 c. milk
1 c. sugar
14 oz. bag coconut
24 lg. marshmallows

Cook milk, sugar and marshmallows until melted. Add coconut, spread between layers.

Topping for Peter Paul Mounds Cake:

1 stick butter
2 sqs. chocolate
16 marshmallows
1 box powdered sugar
1 tsp. vanilla
Milk

Melt butter, chocolate and marshmallows. Mix with sugar, and vanilla. Add enough milk to spread.

Mounds Cake

PETER PAUL MOUNDS CAKE

1 c. all purpose flour
1 c. self rising flour
5 eggs
2 tsp. vanilla
2 c. sugar
1 c. shortening
1 c. milk

FILLING
1 c. sugar
1 c. milk
1 lb. frozen coconut
12 lg. marshmallows
1 tsp. vanilla

ICING
2 c. sugar
1/2 c. margarine
1 sm. can evaporated milk
2 tbsp. cocoa

Directions:
Preheat oven to 350 degrees. Cream together 2 cups sugar and 1 cup shortening. Beat in eggs 1 at a time. Sift the flour together. Add to the sugar mixture, alternating with the cup of milk. Stir in vanilla. Pour into 3 greased and floured cake pans. Bake for 30 to 35 minutes. Meanwhile place 1 cups sugar and 1 cup milk in saucepan and bring to a boil. Add coconut and marshmallows. Stir and boil for 5 minutes. Stir in vanilla. Spread between layers while they are still hot. Let cool and frost.
Icing:
Combine all ingredients and cook over medium heat. Stir
constantly until thick and it forms a soft ball when small amount is dropped in cold water. Cool and frost top and sides of cake.

1 Box chocolate cake mix
1 can Chocolate frosting.
20 Marshmallows
1 pk Coconut
1 c Evaporating milk
1 c Sugar
Make cake according to directions on box. Heat milk, sugar, marshmallows. When marshmallows melt, add coconut. Split cake into 4 layers. Space layers with coconut mixture. Frost with chocolate frosting.
