Its actually very simple, to quote Adolf Galland: "The German Luftwaffe always fought without any reserves. This is also the reason why we have pilots with extremely high numbers of victories." So its a simple number crunch, they never held anyone back and alot of the pilots were extremely good. This allowed to kill rates to rise.

The Luftwaffe's highest scoring aces were mostly on the eastern front. In the early stages of the war the soviets threw up a huge number of cheap aircraft with unskilled pilots, easy prey for skilled Luftwaffe pilots.

The Luftwaffe was engaged in near constant combat from 1936 (Spanish Civil War) through thier final defeat 1945. That is an amazingly long time to gain experience and skills.
However, by the end, they were running out of experienced pilots.

Because they were flying in combat for years before the U.S. got into the war. The Germans also had fighters that were more modern and capable than the old relics most others were flying. The article link below has some great reasons for the many kills.

The had a "fly till you die" policy wheres we (the Americans) rotated their pilots out after so many missions. I'm not sure of the Brit's policy. Also, i've read where the carburators on Spitfires starved for gas on steep dives, while the fuel injection system of Messersmitts allowed them to take steep dives, but i'm sure that didn't account for all their high scores...i just threw that in.
