Homemade Dinner Rolls
1 1/2 teaspoons yeast
3 cups white lily bread flour
3/4 cup milk
1/4 cup sugar
1 teaspoon salt
6 tablespoons butter or margarine
1 egg, slightly beaten
Scald ¾ cup of milk and cool to lukewarm.
Dissolve yeast in ¼ cup of hot water (110 to 115 degrees) in large mixing bowl, let stand 5 minutes.
Mix remaining ingredients and beat well with mixer.
Oil a large bowl, turn so both sides are oiled, cover with wax paper till doubled in size.
Punch down, form into rolls on greased cookie sheet and let rise until double in size.
Bake in preheated 400 degree F oven for 15 to 20 minutes.
Brush tops with butter or margarine.
Prep time is in the rising.
If using bread machine follow mfg instructions.

Easy peasy dinner rolls
Ingredients
1 c Warm water
2 pkg Active dry yeast
1/2 c Butter, melted
1/2 c Sugar
3 Eggs
1 tsp Salt
4-4 1/2 c Unbleached all-purpose flour
Additional melted butter (optional)
Preparation
1. Combine the warm water and yeast in a large bowl. Let the mixture stand until yeast is foamy, about 5 minutes
2. Stir in butter, sugar, eggs and salt. Beat in flour, 1 cup at a time until dough is too stiff to mix (some flour may not be needed). Cover and refrigerate 2 hours or up to 4 days
3. Grease a 13x9-inch baking pan. Turn the chilled dough out onto a lightly floured board. Divide dough into 24 equal-size pieces. Roll eash piece into a smooth round ball; place balls in even rows in the prepared pan. Cover and let dough balls rise until doubled in volume, about 1 hour
4. Preheat oven o 375F Bake until rolls are golden brown, 15-20 minutes. Brush warm rolls with melted butter, if desired. Break rolls apart to serve.
Cook's Notes
Don't use quick-rising dry yeast and before adding the yeast.

You will need:
1 pkg rapid rise active dry yeast
1 cup warm water
2 tbsp sugar
2 1/4 cups flour
1tsp salt
1 egg
1 egg yolk for golden brown appearance on tops
2 tbsp soft shortening
1...Dissolve yeast in warm water
2...Stir in sugar, salt, and 1/2 the flour and beat til smooth
3...Add egg and shortening, beat remainder til smooth
4...Wipe inside of glass bowl with vegetable oil
5...place dough in bowl, cover with towel, and let rise in warm place for 30 to 60 min.
6...Spoon into muffin pan 1/2 to 2/3 full
Let rise 30 to 60 more min.
7...Mix egg yolk with a few drops of water. spread on tops.
8...Bake at 400degrees for 15-20 min.
