Usually if the weather is in the 30's we have left a skinned Deer hang for 2-3 days. My father, a Conservation Officer 37+ years, who is very familiar with wildlife tells me that letting it set for a few days lets the meat tenderize internally, and it cuts easier when cleaning. I've also noticed this while quartering a Deer, and slicing it up for steaks, & roasts.
Although we hang the deer in a building purely for skinning wildlife so that it does not get exposed to a large amount of sun, insects, or animals.
If we know the weather is going to warm up above the 30-40 Degrees area we usually go quarter and clean the Deer prematurely to prevent spoilage.
By the way; A lot of people hang the Deer by the legs when skinning them, which is the worst thing you can do.
If you notice how the Deer's coat falls you can see that if you skin it upside down the hair gets caught in other hair because its not as smooth as if you ran your hand down the pelt from head to rear. Almost like petting a dog. If you go from head to rear its a smooth run, but vice versa the hair stands on end.
This will prevent a majority of hair getting onto your meat.
After that we always stand around the Deer for a good 20 minutes picking any hairs we see and just cleaning the meat up around the bullet wound and such.

No way after you kill a deer you must skin it and put the meat to chill or freeze. If a deer has been dead for a while out in the sun or a closed space the meat aint so convincing then.

Let me get this straight....Dead deer on the side of the road, don't know how long it has been there or how it died and you are thinking about cutting it up for human consumption???? WOW!!!! Don't ever invite me over for Thanksgiving....What would it be, an 11 day old road kill turkey??? Maybe it would be last years Holiday Ham that had been hanging in the garden shed.....

a fresh kill must be skinned and can hang for up to 3-4 days at 40 degrees or below but still above freezing this will allow the the meat to age and tenderize never eat roadkill unless you hit it and take it home immediately

HELL NO!!!
That critter is rotten and dangerous for human consumption!
Even in cold weather, under 40* F, don't wait more than six or eight hours before dressing a deer. If the temperature is over 40*F, skin it and cut it up within four hours.

you should gut your deer as soon as you get it back to camp. you have 2-3 days that you can wait to cut up or processed
