God always set the highest standard for offerings that were acceptable and clean and how they were to be presented by the priests...he wanted as perfect a sacrifice as possible and set very rigid rules for what was acceptable such as animals with no spots or defects, special places and altars, what priests wore and how they were clothed and how healthy they were and so forth. He wanted the best of the best--not the leftovers or unwanted. It was a precursor or example of what is acceptable to God for what was to come in the future...to what eventually was the greatest sacrifice of all--His only Son, Jesus, who was without sin at all and died for the sins of the whole world.

It was a matter of honor. It wouldn't look respectable if the priests were deformed. It may not be politically correct, but the bible and Jewish law place great emphasis on the dignity of authority figures.

This passage refers to the Jewish priests and does not refer to priests as we know them today.
In an ancient society that equated sickness or handicap with sin, they did not want spiritual leaders who bore these signs of sin.
