Simple cookery?

Is Nigel Slater the best? I want simple, family, comfort foods that are easy to make, good for you, easy, not nouvelle cuisine, something from when I was growing up in 50s and 60s.

Beef Stew.
1kg (2lb) Beef Steak.
25g (1 oz.) Flour.
S&P.
Oil.
2 Sliced onions.
1 Beef Oxo cube.
Cup boiling water.
4 Diced Potatoes.
1 Diced Carrot.
1 Diced Turnip.

Remove fat from beef and cut into bite sized pieces and rolled in seasoned flour. Brown in batches in the oil and place in a pot.
Fry off the onions and add to meat.
Add the stock cube and water and scrape all of the good bits from the fry pan and add to the meat and onions.
Stir together and bring to the boil. Reduce heat and d simmer for 2 hours.
Add diced vegetables ½ hour before serving.

Simple wasn't simple in the 50's and 60's. Women were staying home and cooking all day and putting pride in their dishes. Not Rachael Ray 30 minute meals, unless the women made TV dinners.

Try to look on ebay for a Better Homes and Gardens cookbook from that era. I still use that one that my mother gave me. Most recipes are labor-intensive. But I love them!

Dutch Oven Chicken

1 3 pound chicken, cut up
Salt and Pepper
Flour
Butter
1 can cream of chicken soup
1/2 soup can water
Paprika
Anything else you like to add, a few veggies, spices

Sprinle chicken with salt and pepper; dust lightly with flour. Brown on both sides in butter. Combine soup and water; stir well. Pour over chicken; sprinkle with paprica. Bake at 300 degrees for 1 hour. Yield: 4 Servings Serve with boxed dressing and corn on the cob!
