This weekend I am making pork fried rice, I usually just use some leftover pork in it, but I wanted to make it a little nicer and use the kind of pork that is used in restaurants that has that reddish tint on the outside. Does anybody know what is used for that marinade? I am also going to use this pork in some pancit later on this week.

Ok I know how to help you since I'm a chinese :)...It's call char siu(reddish color pork)..You can go to the asian store and get like ready made char siu sauce then you can make your own char siew..Or you can make it from scratch

Char Siu (Chinese Sweet Barbequed Pork)

1 lb pork (I use boneless chops)
3 cloves garlic
1 teaspoon salt
1/2 teaspoon fresh ginger, minced
1 tablespoon soy sauce
1 tablespoon honey
1 tablespoon wine
1/2 teaspoon Chinese five spice powder
red food coloring

Trim the fat from the pork and cut into chunks; each chunk should be between 2-4 bites.

Blend all remaining ingredients.

The pork and marinade should be fairly bright red- add enough food coloring to give it a nice color.

Marinate for at least 3 and preferable 24 hours.

Broil or grill for 3-4 minutes on a side or until the pork is done through.

Since you already have a recipe that you like, but your rice is clumpy, then I'll tell you the secret to making fried rice. Fried rice is best made with cold, day old rice. Freshly cooked rice is "mushy" since the starches are still sticky, while cold rice the grains are more firm since the starches have gelatinized together so the rice will be firm and separate. Also, most Chinese restaurants use regular long grain rice instead of parboiled rice. You've probably seen it before, if you've ever have takeout rice leftover in the fridge, you'll notice that the rice grains are firmer and separate into individual grains the next day.

I have used seasoning meat (pork) in fried rice. It has the same red tint!

in the chinese section of the market they have it. buy the one in the squeeze bottle, it is much easier to use. i think the brand name is ahh-so.
you can't miss it, it is the bright red color. just marinate your pork overnight in it and grill until cooked through over low heat so it doesn't burn. allow to cool completely and cut into cubes for the fried rice.

Try looking for a korean BBQ sauce in your local market. It is most likely a mixture of chili powder and red food coloring.

Maybe achiote!
ACHIOTE is a food color and gives flavor!
Same color of the pork!
