If the weight of my butcher calf is 792 hanging, what should the typical packaged weight be?

on the hoof was he about 1000?at 792, I guess you should end up at about 475? I usually figure 2/3 of weight as loss from hide, bones, insides? I had a Jersey steer at 24 months that hit 1425lbsand we had about 600+ from that one.
