Well I guess that depends on the type of modeling...if you are speaking about high fashion , runway that type of thing, yes there usually is a weight limit, yes it is quite thin (and often unrealistic) and yes their is a height requirment. About 5'9 and up for height. I did know a lot of girls who literally were just naturally tall and very thin, ofcourse there is the other side of girls starving themselves to try and achieve something they just can't do. BUT, there is fitness type of modeling, much more muscular and toned bodies, there is plus modeling as you mentioned...list goes on and on. I actually always thought that catalog type of modeling was a good start, they use all shapes and sizes for that. I actually do not agree with ne of the other listed answers, I do not think there is anything wrong with plus size modeling, a size 12 (which is sometimes considered "plus size") is hardly obese!

How do models get the body-shape they have?: You're born with your body shape. If you're tall and thin, you're tall and thin. If you're pear-shaped, apple-shaped, hourglass-shaped, that's the shape you'll always have. Have a great workout routine, and eat right. Do NOT develop an eating disorder, do NOT smoke. What food do they eat?: Food pyramid, baby! :D Balanced diets make healthy, beautiful babes. Haha. How much to models get per show?: Depends on how big the show is, what designer, etcetera. Is being a model good?: The industry is really rough; there's a lot of pressure. They're always saying, "Oh, lose weight. Gain weight. Stop plucking your eyebrows so much." You know, things like that. And models are no different from regular people. You know, they're not actually as pretty as they look in magazines. Photos are edited carefully after they're taken, almost always, so that the model looks perfect. - Would you like to be model thin?: I was born that way. It's not that great. People ask if I'm anorexic. - Does smoking make you become model thin? Not every model smokes, and NEVER think that it's a good thing to do. Smoking will turn your teeth and your nails yellow, you will age faster, and you'll die faster. Don't start if you haven't yet. You'll have a nasty, un-modelish stench to you, it sticks to your skin, just like the tar sticks to your lungs. Don't die to be beautiful, I'm sure you already are. To really answer the question, smoking does 'fill you up', so to speak; you don't feel hungry afterwards, and so you don't eat as much. But it's definitely not a healthy habit in any way.

To be a professional model basically comes down to three things:
1) Having the look and talent that someone needs (generally the client) bad enough for the project they are working on at that time that they will pay you for your time.
2) Making life easier for the art director and the photographer so they will want to work with you, and not though you out of their studio.
3) Making sure the client, photographer, and art director know you exist and want to work.

Takes dedication, confidence, and beauty.
Yes there should be healthy looking models.. but not necessarily plus size. Not to be mean, but Obesity is a disease... that we shouldn't support.

There is a show (or was a show) on MSNBC called "Models: NYC".
http://www.msnbc.msn.com/id/17938612/
If you follow it you can see what happens behind the scene.
===
I'm not certain if they are still airing the show (or the re-run).
