Make a salad and put 1/2 cup of Ranch Style Beans( unheated) add some cheese and a few tortilla ships crunched up, tomatoes, and any other veg you like and put Catalian dressing on it with your favorite hot sauce if you have one or like it on your salads

Cool Summer Time Greek Pizza
1 (10 ounce) package prepared pizza crust (two 7-inch crusts)
1/2 cup purchased roasted garlic and chive hummus (comes in 8 oz container in deli secton or refrigeraton section)
1/2 cup peeled seeded chopped cucumbers
1/2 cup seeded plum tomatoes
1/2 cup crumbled feta cheese


1. On each pizza crust, layer half of hummus, cucumber, tomato, and cheese.
2. Cut into quarters and serve.

When it's too hot to eat is a great time to lose weight :) Keep your meal light and use the oven minimally. Make a muffaletta sammich and put out some chips and slaw.

My favorite slaw is with red cabbage, crushed pineapple, craisins, toasted pecans and red grapes tossed with a little of the pineapple juice and EVOO.

Tuna stuffed tomatoes. Your favorite recipe for tuna salad stuffed in large fresh tomatoes(they are abundant this time of year) Cut top off of tomatoes and scoop out the meat and seeds(don't throw away it will make a good salsa) Pat inside of tomato with a paper towel and fill to overflowing with the tuna salad, chill. When you are ready to serve, dress your favorite combination of salad greens with a little vinaigrette and nestle the chilled stuffed tomato in a pile of greens. Serve with buttery crackers and lots of iced tea. For dessert orange sherbet and a good store bought sugar cookies.

Mexican Chicken Salad

(Only part you need to cook is the chicken)

INGREDIENTS:
3 cups cooked cubed chicken
15 oz. can corn, drained
15 oz. can black beans, rinsed and drained
1 green bell pepper, chopped
1 red bell pepper, chopped
1 cup shredded Cheddar cheese
1 cup thick and chunky salsa
1/4 cup chopped cilantro
3/4 cup oil and vinegar salad dressing

PREPARATION:
Combine all ingredients except salsa, cilantro and salad dressing and toss gently. Combine salsa, cilantro and salad dressing in small bowl and drizzle over chicken mixture. Toss to coat. Cover and chill for 1-3 hours to blend flavors


To Drink...

Tangerine Cooler

INGREDIENTS:
2 cups cold water
6 oz. can frozen tangerine concentrate, thawed
6 oz. can frozen lemonade concentrate, thawed
2 (16 oz.) bottles sparkling water, chilled

PREPARATION:
Mix all ingredients in 2 quart glass pitcher and serve over ice.

a totellini salad is a great summer dish. boil a package of tortellini, let cool, then add olive oil, vinegar, salt, pepper, red onions and red peppers. toss it all together and add a package of feta cheese. very tasty!
