I got this recipe from my sister. There are so many ways to use this, and it is so good, much better that salsa in a jar.

Change to: quarts US Metric
4 plum tomatoes, diced
1 (28 ounce) can crushed tomatoes, undrained
2 (3 ounce) cans dried green chilies
1 bunch green onions, chopped
1/2 cup chopped fresh cilantro
1 tablespoon white vinegar
2 teaspoons salt
2 teaspoons pepper
1 teaspoon sugar
2 teaspoons light soy sauce
1 teaspoon lime juice

This salsa is very flavorful and we make it every summer with garden tomatoes. I got this recipe from a friend years ago

Change to: pints US Metric
12 cups ripe tomatoes, peeled and diced
2 cups chopped green peppers
1/2-1 cup diced jalapenos (leave seeds in)
5 cloves minced garlic
4 medium white onions, chopped
1 1/8 tablespoons canning salt
1/4 cup sugar
1 cup cider vinegar
2 tablespoons minced cilantro

How about a fruit salsa. Used to get it at some Mexican places during the summer, served with fresh tortilla chips that are sprinkled with just a little brown sugar and cinnamon while still warm. This will meet your sweet and spicy request.
2 cups fresh fruit.
A mix of any of these will work: orange, tangerine, starfruit ( carombola )mango, pineapple, firm fleshed plums or even grapes cut in half. Canned fruit is ok but not as good.
I have had it with very ripe tomato as part of the fruit.
3 - 4 chopped jalepeno or serrano peppers. I like to use 2-3 habeneros instead.
A little bit of chopped cilantro. or mint
Serve with a little dish of sour cream, especially Mexican sour cream if available.

Rotel Salsa
1 can Rotel Diced Tomatoes and Chiles
1 large tomato
2 Green Onions
1/2 Lime -- (its juice!)
1 clove Garlic
1 teaspoon salt
Basically, just cut/dice everything up very well and mix together, put it in the fridge a while to get the flavor throughout.

I LOVE THIS ONE. (My mom likes less cilantro). This recipe is always a hit at a party and last summer I had friends buying it from me. It is very basic and I do alot of variations so here is the simple recipe and do what you want with it. More chuncky or smooth spice it up or add corn and black beans. Also this one calls for canned tomato which is great for winter, but in the summer I use fresh and I peel them first.
1 Lg. can whole tomatoes
2 jalepeno peppers
2 cloves garlic
1 lg handful cilantro
juice of 2 limes
salt to taste
Mix all in a blender, until smooth
Keeps 2 weeks in fridg.
After the smoothing is when I add my extras and chucky stuff.

My favorite salsa is
diced tomatoes
diced jalepeno
diced vidalia onion
chopped cilantro
lime juice and finally,
a little powdered sugar.
Also, your favorite Mex restaurant will sell you their salsa by the pint for just a few bucks. To get a restaurant style salsa, you just put your tomatoes, onions, cilantro, salt and japeno in the cuisinart and pulse til desired consistency.

I am salsa queen according to all my friends! Here's the rules:
There are none! Dried, smoked, fresh, frozen, powdered, bottled, or canned ingredients can be used. (Prefer fresh!)
Tomatoes
Peppers (any kind, hot or not)
Onions
Garlic
Cilantro
Tomatillos (makes a 'creamier' taste and texture)
Lime or lemon
Salt to taste (more if hotter, and also enough to preserve if not eaten right away)
Mix as much of whichever you like. Blend in blender, or crush, or however you want. Eat raw (fresh), or cook either before or after blending by boiling, steaming, roasting, or grilling. Serve hot or cold. Make fresh last longer by cooking it before it does go bad on you.
For a thicker paste, use tomato paste, powdered garlic or onions, dried cilantro, and dried chili peppers. Or try straining after cooking. To use dried foods, you can boil or steam them to get them soft again.
Freeze in small amounts if desired.

PICANTE SAUCE
1 gal. tomatoes
4 lg. onions
6-12 jalapeno peppers
1 c. sugar
1 c. vinegar
4 tbsp. salt
1/2 tsp. nutmeg
1/2 tsp. garlic powder
Peel, core and chop tomatoes, pour off most of juice; 6 peppers for mild - chopped or ground; and onions. Cook down to your consistency. Stir often. Makes 6 pints. One cup picante sauce with 8 ounces cream cheese makes dip for chips.

I make a tomato salsa with fresh tomatoes,onions, jalapeno peppers and a little fresh garlic.Put the ingredients in the food processor and chop to the desired consistency,then add a little olive oil and a dash of vinegar,salt and pepper to taste. simple and delicious!!

green salsa you need
hitomates
green tree chillies
cilantro
salt and union
boil the hitomate and Chile in water till its soft
then throw all the ingredients in a blender
blend of course
and you have green salsa OK
wait till it cools off then you can eat it with whatever you want
