Pickles are made from cucumbers which are mostly made of water (95%) ! It does not have anything to do with the pickling process. That's just for the taste and to make the cucumber into a pickle. Pickles are great though! This food is low in Saturated Fat, and very low in Cholesterol and Sodium. It is also a good source of Vitamin A, Pantothenic Acid, Magnesium, Phosphorus and Manganese, and a very good source of Vitamin C, Vitamin K and Potassium.

But, because pickles and cucumbers consist mainly of water, they offer little nutritional value. With no protein and just a small amount of calcium and only a trace of iron, pickles are not considered a "vegetable choice" in the School Lunch Program. So, nutritionally speaking, there are better choices that provide the vitamins and minerals necessary for health. And, by the way, one whole dill pickle can provide nearly half an adult's daily suggested supply of sodium.

actually cucumbers do have nutritional value
Nutritive value: Cucumber is not only cooling and palatable to take but it is also quite nutritive. One medium size cucumber provides as much as the following:
Calories = 39 Saturated fat (g) = 09
Cholesterol (mg) = 0 Carbohydrate (g) = 8.3
Dietary fibre (g) = 2.4 Protein (g) = 2.1
Sodium (mg) = 6.00 Potassium (mg) = 433
Calcium (mg) = 42 Iron (mg) = 0.8
Zinc (mg) = 0.6 Vitamin C (mg) = 16
Vitamin A (mg) = 647 Vitamin B (mg) = 0.13
Thiamine (mg) = 0.07 Niacin (mg) = 0.7
pickles do too..... they have a lot of sodium though....it may just be in the quantity eaten...good question

Pickles are mostly cucumbers, vinegar, water, and some spices. Sweet ones contain sugar. Many contain preservatives. That is why I make my own... less chemicals, so healthier.

Cucumbers have almost no nutritional value, like lettuce and radishes they are mostly water.
