Doesn't the 30GB Video ipod COME WITH the software ?
If not try downloading it from www.apple.com

Theres a bit of shareware called senuti for the mac that does that. Go to versiontracker.com there's bound to be a PC equivalent there.
iTunes will only let you put music onto the iPod, not the other way round (copyright blah etc.)

why spend money on an ipod when you can get it for free? just go to this site and complete a few quick tasks and they'll send you one!
