If you have some nice Minolta glass, you might want to consider the Sony dSLR. I have no idea what lenses are compatible with it, so you'd want to do some research before deciding.
I shoot Nikon film and digital. I have the D80, a little pricier than the D40x. You might consider the D70s. as well, or the D50 if you can find one. The D40 can't use the full features of many older lenses, but if you don't already have any old Nikon glass you want to use, then that is not a problem.

I have the Nikon D40x and it is a fine camera. I don't think you will become frustrated or bored with it as it has many different manual modes along with the great automatic settings. It has a very quick start up time when you first turn it on and a quick recovery time - you can shoot about 3 fps. The high speed high capacity 4 gb sd cards aren't too expensive and will give you over 500 shots at full resolution. The auto focus Nikon lenses are a bit expensive, but you can use other brands that are manual focus and cheaper.

I'm a Canon guy, so I can't answer specifically about that model. What I can say is that I use the Canon Rebel XT as a backup body, which is the low-cost Canon SLR. Canon and Nikon realistically are quite similar, so for this argument I'll assume they are the same.
The Rebel XT is great. It's a great value with a lot of features. I have a 5D which of course is better, but there are plenty of times when my wife is using it, so I use the Rebel XT. I don't really mind, the images come out quite nice unless it's a low light (high ISO) image. At low ISOs the Rebel XT and 5D produce very similar images.
I don't think you need to worry about "beginnerishness" on any SLR camera.
Worry more about the lenses. If you want to shave cost, get a couple of primes instead of zooms. They are typically better quality.

I love nikon cameras. My film camera is Nikon and I've worked with the D 70, d100 and d200. Sorry, no D40, but I would assume it's good since the others are.

nikon makes the best cameras. however, they are kinda pricey. a nikon d40 or d40x is around 300-600 dollars but maybe you could find a cheaper one on ebay or somewhere like that. in the end....its DEFINETELY worth it tho.
